Ingredients

  • 1 head Iceberg Lettuce
  • ⅓ cup Bacon, cooked and crumbled
  • 4 pieces Hard-Boiled Eggs, chopped
  • 10 pieces Grape Tomatoes, sliced in half
  • 1-2 tablespoons Extra Blue Cheese Crumbles
  • Chives, for garnish
  • ¼ cup Greek Yogurt, plain or low-fat
  • 3 tablespoons Sour Cream, full or low-fat
  • 1 tablespoon Mayonnaise
  • 3 tablespoons Milk
  • dash Worcestershire Sauce
  • ¼ cup Blue Cheese Crumbles
  • 2 teaspoons White Balsamic Vinegar
  • Salt & Pepper, to taste
  • ¼ cup Dark Balsamic Vinegar
  • 1 tablespoon Honey

Instructions

  • Remove any wilting or brown leaves from the iceberg lettuce. Rinse the whole lettuce head and drain it, then cut into wedges.
  • In a small bowl, whisk together the Greek yogurt, sour cream, mayonnaise, milk, Worcestershire sauce, blue cheese, white balsamic vinegar, salt, and pepper until smooth.
  • In a small saucepan, combine the dark balsamic vinegar and honey. Simmer on low heat for about 5 minutes until thickened.
  • On plates, place the wedges of iceberg lettuce. Drizzle with the dressing and top with bacon, eggs, tomatoes, extra blue cheese, and chives. Drizzle with the balsamic reduction and serve.

Notes

  • For extra crispiness, chill the lettuce wedges in the refrigerator before serving.
  • The dressing can be made a day in advance.
  • Choose a fresh, firm iceberg head for better presentation.
