Ingredients

  • ½ cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons light brown sugar
  • 1 tablespoon honey
  • 1 teaspoon toasted sesame oil
  • 1-2 cloves garlic, finely minced
  • 1 teaspoon freshly grated ginger
  • ½ teaspoon salt
  • ½ teaspoon crushed red pepper flakes
  • 2 teaspoons cornstarch
  • 2 tablespoons water
  • 1 ½ pounds salmon, skin removed and cut into 1-inch cubes
  • 2 cups cooked jasmine rice
  • 1 cup shelled edamame, cooked
  • 1 cup English cucumber, sliced
  • 1 cup carrots, julienned
  • 1 medium Hass avocado, sliced or cubed
  • 1-2 tablespoons green onions, thinly sliced
  • 1-2 teaspoons sesame seeds

Instructions

  • Combine soy sauce, rice vinegar, brown sugar, honey, sesame oil, garlic, ginger, salt, crushed red pepper flakes, cornstarch, and water in a bowl. Whisk until fully combined and set aside.
  • Preheat the oven to 400°F (200°C) and optionally line a baking tray with non-stick foil.
  • Place salmon cubes in a bowl and drizzle with 3-4 tablespoons of the prepared teriyaki sauce. Mix well to ensure all pieces are coated and let marinate for at least 30 minutes.
  • Place the marinated salmon cubes on the prepared baking tray and bake for 9-12 minutes, or until cooked to your liking. Allow to rest after baking.
  • In a separate pan, bring the reserved teriyaki sauce to a gentle simmer. Mix cornstarch and water to make a slurry, then stir into the sauce. Whisk until thickened, about 3 minutes.
  • While the salmon marinates, prepare the jasmine rice, edamame, cucumber, carrot, and avocado for the bowls.
  • Divide the cooked rice, edamame, cucumber, carrots, and avocado among four bowls.
  • Top each bowl with the baked salmon, drizzle with thickened teriyaki sauce, and garnish with green onions and sesame seeds. Serve immediately.

Notes

  • For enhanced flavor, consider marinating the salmon longer, using fresh garlic and ginger, or trying different toppings such as shredded nori or pickled veggies.
