Ingredients

  • 1 ear Corn
  • 1 long English Cucumber, chopped
  • 2 cups Cherry Tomatoes
  • ½ Avocado, cubed
  • 2 cups Fresh Strawberries, quartered
  • ½ cup Fresh Basil, chopped
  • ⅓ cup Feta, crumbled
  • ½ Lemon, juice only
  • 2 tablespoon Olive Oil
  • Salt and Pepper, to taste

Instructions

  • Steam the Corn. To steam the corn, bring a large pot of water to a boil. Add the ear of corn directly into the water or place it in a steamer basket. Cover with a lid and steam for 5 minutes.
  • Prepare Other Ingredients. While the corn steams, chop the strawberries, cherry tomatoes, cucumber, and avocado. Crumble the feta and chop the fresh basil.
  • Cool and Slice the Corn. Once the corn is done, remove it from the water and allow it to cool. Slice the kernels off into a bowl.
  • Combine Ingredients. In a large salad bowl, add the corn kernels, sliced strawberries, cherry tomatoes, cucumber, and avocado chunks. Sprinkle with feta, basil, olive oil, lemon juice, salt, and pepper.
  • Toss and Serve. Toss everything to combine. You can enjoy it immediately or chill it in the fridge for 30 minutes before serving.

Notes

  • Use fresh corn for the best flavor, ensure your avocado is ripe, choose deep red strawberries, and chill before serving for enhanced flavors.
  • This salad can be made ahead of time and pairs well with grilled chicken or fish.
