Ingredients

  • 8 ounces Mini Farfalle Pasta Uncooked
  • ½ item English Cucumber Sliced and quartered.
  • 1 item Bell Pepper Chopped.
  • 1 cup Grape Tomatoes Halved.
  • 1 cup Red Onions Thinly sliced.
  • ½ cup Radishes Diced.
  • 1 cup Sharp Provolone Cheese Diced.
  • 3 ounces Sliced Beef Salami Diced.
  • 1 can (15.25 ounces) Corn Drained.
  • ¼ cup Fresh Parsley Chopped.
  • ½ cup Italian Dressing Or more to taste.
  • to taste Black Pepper or Red Pepper Flakes

Instructions

  • Cook pasta in boiling salted water according to package directions until al dente. Drain and rinse with cold water to stop the cooking process. Drain again thoroughly and set aside to cool.
  • In a large mixing bowl, combine the cooled pasta, cucumber, bell pepper, tomatoes, onion, radishes, cheese, salami, corn, and parsley. Toss everything together gently to distribute the ingredients evenly.
  • Pour in the Italian dressing over the veggie-pasta mixture. Stir well until everything is coated with the dressing, adding more dressing if needed.
  • Refrigerate the salad until you are ready to serve, preferably for an hour or two. This allows the flavors to meld beautifully.

Notes

  • For a vegan twist, omit salami and cheese, replacing with more veggies like zucchini or olives.
  • Consider mixing in a spoonful of pesto for added flavor.
