Ingredients

  • 2 lb Fresh Strawberries
  • 1 cup Granulated Sugar
  • 1 tablespoon Lemon Juice

Instructions

  • Cut the strawberries into quarters. This size helps them break down quickly when cooking. Place them in a saucepan.
  • Add the sugar and lemon juice to the saucepan. Stir everything together until the strawberries are well coated.
  • Heat the mixture over medium-high heat. Allow it to cook, stirring occasionally, until it reaches a boil.
  • Once boiling, reduce the heat to low. Let it simmer for about 30 minutes, stirring occasionally to prevent sticking.
  • Turn the heat back to high and let it boil for another minute. Then reduce the heat and let it simmer for another 10 minutes, or until it reaches your desired consistency.

Notes

  • Choose ripe strawberries for the best flavor.
  • Use a wide pot to help moisture evaporate.
  • Check consistency with a cold plate test.
  • Allow cooling before transferring to jars.
