Instructions
Heat 1 teaspoon of oil in a large pan over medium-high heat. Add the onion and cook for 3-4 minutes until it softens and turns a little brown.
Add the broccoli to the pan along with a tablespoon of water. Stir occasionally and cook until the broccoli is tender, about 3 minutes.
Incorporate the bell pepper and ginger, cooking for another 2 minutes until the peppers just start to soften. Season with salt and pepper to taste, then transfer to a plate and cover to keep warm.
Wipe out the pan and add the remaining 2 teaspoons of oil. Add the chicken and season with salt and pepper. Cook for 3-4 minutes on each side until fully cooked and browned.
Return the cooked vegetables to the pan with the chicken.
In a small bowl, mix the soy sauce, honey, and chili garlic sauce. In another bowl, combine the cornstarch and 2 teaspoons of cold water, whisking together.
Mix the cornstarch mixture into the soy sauce mixture and stir until combined.
Pour the sauce over the chicken and vegetables, turning the heat to high until it boils and the sauce thickens slightly, about 30 seconds.
Top with cashews and green onions. Serve the stir fry over brown rice if desired.
Notes
For a complete meal, serve over rice.
