Ingredients

  • 8 ounces Uncooked macaroni
  • 3 pieces Hard boiled eggs, peeled and diced
  • 2 stalks Celery, diced
  • ½ piece Red bell pepper, diced
  • ½ medium Red onion, diced
  • 1 cup Mayonnaise
  • 1 tablespoon Dijon mustard
  • 2 tablespoons Lemon juice
  • ½ teaspoon Salt
  • ¼ teaspoon Pepper
  • ¼ teaspoon Garlic powder
  • ¼ teaspoon Paprika
  • 1 teaspoon Fresh parsley, chopped

Instructions

  • In a large pot, bring salted water to a boil. Add the macaroni and cook according to the package directions until al dente.
  • Once cooked, drain the pasta and rinse it with cold water to stop the cooking process, allowing it to cool to room temperature.
  • In a sizable bowl, combine the mayonnaise, lemon juice, Dijon mustard, salt, pepper, garlic powder, and paprika.
  • Whisk the ingredients together until you achieve a smooth and creamy dressing.
  • To the dressing, add the cooled macaroni, diced onion, celery, bell pepper, and chopped eggs.
  • Toss everything together until all the ingredients are evenly coated with the dressing.
  • Pour the macaroni salad into a serving dish and top it with the chopped parsley.
  • You can serve it immediately or cover it and refrigerate until ready to serve.

Notes

  • Chill your salad for at least an hour to enhance the flavors.
  • Fresh ingredients make a noticeable difference.
  • Do not overcook the pasta, and adjust seasoning to taste.
  • Store leftovers in an airtight container in the refrigerator for up to three days.
