Ingredients

  • ¼ cup Unsalted butter
  • ¼ cup All-purpose flour
  • 2 cups Half and half (or whole milk)
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 3 cups Shredded cheddar cheese (divided)
  • 5-6 cups Peeled and sliced potatoes About 6 medium potatoes, cut into ⅛ inch slices for the perfect texture.

Instructions

  • Preheat the oven to 350°F (175°C). Prepare a 9x13 inch baking pan by spraying it with non-stick spray.
  • Melt the butter in a medium to large saucepan over medium heat. Once melted, add the flour and cook for about 2 minutes, stirring constantly until it's well mixed.
  • Slowly pour in the half and half while stirring regularly. Keep stirring until the mixture thickens, about 2 minutes. Remove from heat and add salt, pepper, and 2 cups of shredded cheese.
  • Layer about one third of the sliced potatoes in the prepared pan. Pour one third of the cheese sauce over the potatoes. Repeat until all potatoes and cheese sauce are layered.
  • Cover the pan with foil and bake for 40-50 minutes, or until the potatoes are nearly tender. Remove the foil, sprinkle with the remaining cup of cheese, and bake for an additional 20 minutes until bubbly and the potatoes are soft.

Notes

  • Let the scalloped potatoes sit for about 10 minutes after baking before serving.
  • You can customize by adding garlic, herbs or vegetables like broccoli or spinach.
  • For crispy toppings, consider adding breadcrumbs mixed with melted butter.
