Ingredients

  • 14 ounces kielbasa Sliced into rounds
  • 4 medium potatoes Diced into small cubes
  • 1 tablespoon olive oil
  • 1 small onion Diced
  • 1 medium red bell pepper Diced
  • 1 clove garlic Minced
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

Instructions

  • Slice the Sausage into ¼ inch rounds. Place the sliced kielbasa into a large skillet and cook over medium heat until they start to brown, stirring occasionally to prevent sticking.
  • Carefully remove the browned kielbasa from the skillet, but leave the grease behind to flavor the potatoes.
  • Add olive oil, diced potatoes, salt, and pepper to the skillet. Stir the potatoes well and cover the skillet to allow them to cook evenly.
  • Cook for 8-10 minutes, stirring occasionally until the potatoes begin to soften, ensuring they do not burn on the bottom.
  • Remove the lid and add diced onion and bell pepper to the skillet. Continue cooking for another 7-8 minutes until the vegetables start to soften.
  • Stir in the minced garlic and cook for 1-2 minutes more to infuse the dish with a lovely garlicky aroma.
  • Add the kielbasa back to the skillet and let it warm through for about 5 minutes, stirring to combine everything well.
  • Optionally garnish with fresh parsley and serve hot. Enjoy the hearty flavors of this comforting dish.

Notes

  • Use fresh ingredients for the best flavor, and feel free to customize with your favorite vegetables or spices.
  • Allow the dish to rest for a couple of minutes after cooking to meld the flavors.
