Ingredients

  • 2 tablespoons Olive Oil Divided,
  • 12-14 ounces Sausage Cut into thin rounds for cooking.
  • 1 Red Bell Pepper Cut into thin strips
  • 1 Yellow Bell Pepper Cut into thin strips.
  • 1 small Yellow Onion Cut into thin strips
  • 1 teaspoon Italian Seasoning
  • 4 cloves Garlic Minced
  • Salt and Freshly Ground Black Pepper
  • ½ teaspoon Red Pepper Flakes Optional
  • 1 Green Onion Sliced,
  • Fresh Chopped Parsley or Basil For garnish.

Instructions

  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced sausage rounds and cook until browned, about 5 to 6 minutes. Remove from the skillet and set aside.
  • Increase the heat to medium-high. Add the remaining olive oil, followed by the bell peppers and onions. Sprinkle with Italian seasoning and sauté for 4 to 5 minutes, until the vegetables are tender.
  • Stir in garlic, salt, and pepper, and cook for an additional minute.
  • Return the browned sausage to the skillet. Cook for 1 minute to heat through, stirring to combine all ingredients well.
  • Garnish generously with red pepper flakes, green onion, and parsley or basil. Serve the skillet hot, as is, or over rice or noodles.

Notes

  • Customize spice level by adjusting red pepper flakes.
  • For a smokier flavor, consider grilling the ingredients briefly before skillet cooking.
  • Use leftovers in wraps or sandwiches for a quick lunch.
