Ingredients

  • 14 oz Rice Noodles
  • 1.5 lbs Boneless Skinless Chicken Thighs
  • 2 tablespoon Peanut Oil
  • 2 Eggs
  • 1 large Red Bell Pepper, sliced
  • 6 oz Bean Sprouts
  • 4 cloves Garlic, minced
  • ¼ cup Green Onions, chopped
  • ¼ cup Tamarind Paste
  • ¼ cup Fish Sauce
  • 3 tablespoon Low Sodium Soy Sauce
  • 2 tablespoon Lime Juice
  • ¼ cup Brown Sugar
  • ½ teaspoon Red Pepper Flakes
  • ½ teaspoon Minced Dried Chili Peppers, optional
  • ½ cup Crushed Peanuts
  • 2-3 Lime Wedges
  • 2 tablespoon Fresh Cilantro, minced

Instructions

  • Cook the rice noodles according to the package instructions but slightly undercook them. Drain the noodles and set them aside.
  • Prepare all your ingredients: soak the bean sprouts in cold water, slice the bell pepper, mince the garlic, dice the green onions, and whisk the eggs in a bowl. Mix together all the sauce ingredients in a separate bowl and set aside.
  • Preheat a large pan over medium-high heat and add 2 tablespoon of peanut oil. Sauté the diced chicken until it's just cooked through, then remove and set aside.
  • Add more oil to the pan and sauté the bell peppers until they soften. Add garlic, red pepper flakes, and bean sprouts, cooking for another 2 minutes.
  • Move the vegetables to one side of the pan. Pour in the whisked eggs on the empty side, scramble them, and then mix briefly with the vegetables.
  • Add the cooked chicken and rice noodles to the pan. Pour in the sauce and toss everything together to combine well. Stir in the green onions and cook for a couple more minutes.
  • Serve the dish topped with crushed peanuts, fresh cilantro, and a squeeze of lime juice.

Notes

  • Perfect Noodles – Slightly undercooking the noodles ensures they don’t turn mushy when mixed with the sauce later.
  • Sauce Balance – Adjust the sugar and fish sauce to suit your taste for sweet and salty flavors.
  • Chicken Texture – Use thighs over breasts for more tender and flavorful chicken.
  • Homemade Tamarind – If you can’t find tamarind paste, mix lime juice with a hint of sugar for a similar tang.
  • Veggie Crunch – Don’t overcook the sprouts and bell peppers; a slight crunch enhances the texture.
