Ingredients

  • 2 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Salt
  • 1 teaspoon Apple pie spice Or use ¾ teaspoon cinnamon + ¼ teaspoon nutmeg
  • 1.5 cups Unsalted butter, softened
  • 1 cup Granulated sugar
  • 1 cup Light brown sugar, packed
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 3 cups Old fashioned oats
  • 1.5 cups Raisins

Instructions

  • Preheat your oven to 375 degrees F. Line a few baking sheets with parchment paper.
  • In a medium bowl, combine flour, baking powder, salt, and apple pie spice. Stir until evenly mixed.
  • Using an electric mixer, beat the softened butter with the granulated and brown sugars on high speed until light and fluffy, about 3-4 minutes.
  • Mix in the vanilla extract and eggs one at a time until well combined.
  • Gradually integrate the dry mixture into the creamed butter on low speed.
  • Gently fold the oats and raisins into the mixture with a spatula.
  • Using a 1 ½ tablespoon cookie scoop, portion the dough onto the prepared sheets, spacing them two inches apart.
  • Bake for 12-14 minutes, until cookies are golden at the edges. Cool for 5 minutes on the baking sheets.

Notes

  • Chill the dough for 30 minutes before baking to enhance chewiness.
  • Rotate cookie sheets halfway through baking for even results.
  • For added flavor, consider using cardamom or nuts.
