Ingredients

  • 6 ears Ears of Corn, unhusked
  • 6 tablespoon Unsalted Butter
  • ¼ cup Cotija Cheese, crumbled
  • ¼ cup Fresh Cilantro, chopped
  • 2 Limes, juiced
  • 2 teaspoon Chili Powder

Instructions

  • Preheat your oven to 350 degrees F (175 degrees C). This ensures that the corn will cook evenly.
  • Place the unhusked corn directly on the oven rack. Roast for about 40 to 45 minutes or until tender and cooked through.
  • While the corn is roasting, mix the cotija cheese, chopped cilantro, lime juice, and chili powder in a bowl. This mixture will add flavor and texture to the corn.
  • Once roasted, carefully peel back the husks and rub each ear of corn with 1 tablespoon of butter. This will enhance the taste and provide a glossy finish.
  • Evenly sprinkle the cheese mixture over the corn. Ensure each ear is well-coated for maximum flavor.
  • Serve the corn warm and savor the unique combination of flavors.

Notes

  • Choose fresh, seasonal corn for the best flavor.
  • Let corn cool slightly for easier husk removal.
  • Use feta cheese as a substitute for cotija if needed.
  • Adjust chili powder for spice preference and roll limes for maximum juice extraction.
