Ingredients

  • 2 tablespoon Olive oil or vegetable oil
  • 1 cup Long grain white rice
  • 2 cups Chicken broth
  • 5.5 oz Tomato juice
  • Salt and pepper
  • Cilantro

Instructions

  • Begin by heating oil in a skillet over medium-high heat.
  • Add the rice to the skillet, stirring frequently until it browns slightly to a light tan.
  • Stir in the chicken broth, tomato juice, salt, and pepper, ensuring even seasoning.
  • Reduce heat to low, cover the skillet tightly with a lid and let it simmer for about 20 minutes until the liquid is fully absorbed.
  • Once absorbed, turn off the heat and let it rest covered for another 10-15 minutes.
  • Fluff the rice with a fork and garnish with fresh cilantro before serving.

Notes

  • For added flavor, consider toasting the rice before adding the liquid.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
