Preheat your oven to 375°F. Set aside 1½ cups of shredded mozzarella for the topping.
In a mixing bowl, combine ricotta, grated Parmesan, 2 cups of shredded mozzarella, softened cream cheese, eggs, minced garlic, and seasonings. Stir until well-blended and set aside.
Boil manicotti shells in salted water for 1-2 minutes less than package directions for al dente. Drain and rinse with cold water.
Spread half of the marinara sauce on the bottom of a 9x13-inch casserole dish. Fill each manicotti shell with the cheese mixture and arrange in the dish.
Pour remaining marinara sauce over stuffed shells and sprinkle reserved mozzarella on top. Cover with foil and bake for 25 minutes. Uncover and bake for an additional 10 minutes. Broil for 1 minute until golden-brown.
Garnish your baked manicotti with a sprinkle of parsley and serve immediately with garlic bread.
Notes
Ensure to boil the manicotti slightly less than al dente to prevent mushiness.
Using a piping bag can make filling shells easier.
For a richer sauce, consider adding a splash of red wine.
