  • ½ cup Unsalted butter
  • 1 15-oz can Cream-style corn, undrained
  • 1 15-oz can Corn, drained
  • 1 cup Sour cream
  • 2 pieces Eggs
  • 1 8.5 oz box Corn muffin mix (Jiffy brand)
  • ½ teaspoon Salt

Instructions

  • Preheat your oven to 375°F (186°C). Grease a 9x13 inch casserole dish with butter or cooking spray.
  • In the microwave, soften the butter for about 15 seconds.
  • In a large bowl, stir together the cream-style corn, plain corn, sour cream, eggs, corn muffin mix, and salt until well combined.
  • Transfer the mixture to the prepared casserole dish and smooth the surface.
  • Bake in the preheated oven for 30 to 45 minutes, or until the top is golden brown and the center no longer jiggles.
  • Let the casserole cool slightly before cutting it into squares. Serve warm.

Notes

  • Measure ingredients accurately for best results, and avoid overmixing to prevent a dense texture.
  • Consider adding cheese for extra flavor, and let the casserole rest slightly before serving for easier slicing.
