Ingredients

  • ⅓ cup Tahini
  • 2-4 tablespoons Cold Water
  • 2 tablespoons Extra Virgin Olive Oil
  • ½ teaspoon Ground Cumin
  • ¾ teaspoon Fine Sea Salt
  • 2 cloves Garlic
  • Juice of 1 lemon Lemon Juice
  • 15 ounce Chickpeas Rinsed and drained,

Optional Toppings

  • to taste Extra drizzle of olive oil
  • to taste Chopped fresh parsley
  • to taste Sprinkle of ground sumac or paprika
  • to taste Toasted pine nuts

Instructions

  • Add tahini, cold water, olive oil, cumin, salt, garlic, and lemon juice to a food processor. Puree until the mixture is smooth and well combined without any lumps.
  • Add in the drained chickpeas to the food processor. Puree for 3-4 minutes, pausing halfway to scrape down the sides of the bowl, until the hummus is smooth and creamy.
  • If the hummus seems too thick, add an additional tablespoon or two of cold water. Mix well until you reach the desired texture.
  • Taste the hummus and adjust seasoning with more salt, cumin, and/or lemon juice if needed to balance the flavors.
  • Serve immediately, garnished with your desired toppings. Alternatively, transfer to a sealed container and refrigerate for up to 3 days.

Notes

  • Chill your ingredients beforehand for a smoother, creamier texture.
  • Use freshly squeezed lemon juice for the best flavor.
  • Roasting garlic can mellow its intensity.
  • For a smoother texture, consider peeling chickpeas.
