  • ½ Red Onion, sliced
  • 3 tablespoon Fresh Herbs (basil, cilantro, or parsley)
  • 2 tablespoon Olive Oil
  • 1 teaspoon White Distilled Vinegar
  • 1 Garlic Clove, minced
  • ½ teaspoon Salt
  • ¼ teaspoon Ground Black Pepper

Instructions

  • Start by slicing the tomatoes and red onion, aiming for even slices. Add them to a spacious salad bowl.
  • In a small bowl, mix together the olive oil, white vinegar, minced garlic, salt, and black pepper until well combined.
  • Pour the dressing over the tomatoes and onions in the salad bowl. Gently toss until all ingredients are evenly coated.
  • Sprinkle fresh herbs over the salad and toss lightly once more.
  • Serve immediately to enjoy fresh flavors. This salad is best served fresh.

Notes

  • For a heartier dish, consider adding cooked quinoa or chickpeas.
  • Adjust the dressing to taste, adding sugar or olive oil if too acidic.
