Delicious homemade English muffins with a perfect crunch outside and a soft, fluffy interior, ideal for breakfast or brunch with endless topping options.
In a stand mixer bowl, combine the milk, melted butter, egg, sugar, yeast, and salt. Mix thoroughly.
Add the flour to the mixture. Using the dough hook on medium speed, knead for 7-8 minutes until smooth and elastic. If dough is overly sticky, incorporate up to 1 tablespoon of additional flour.
Cover the bowl and place it in a warm spot. Allow the dough to rise for 60-90 minutes, or until it doubles in size.
Punch down the risen dough. On a generously floured surface, roll out to a ¾-inch thick rectangle. Cut out 2 ½-inch circles and lay them on a parchment-lined baking sheet sprinkled with cornmeal.
Allow the muffins to rise again for 30 minutes.
Heat a large skillet over medium-low heat, greased with butter. Cook 3-4 muffin pieces at a time for 7-8 minutes on each side until golden brown. Adjust the heat if needed to prevent over-browning.
Notes
Measure precisely to avoid heavy, dense dough.
Place covered dough in a warm oven to rise if your kitchen is cold.
Use medium-low heat for cooking.
Generously coat the baking sheet with cornmeal to give each muffin its signature crunchy texture.
