Ingredients

  • 1 cup warm water (110°F)
  • 2 teaspoons active dry yeast
  • 2 teaspoons granulated sugar
  • 2.5 cups all-purpose flour
  • 1.5 teaspoons kosher salt
  • 1.5 tablespoons olive oil

Instructions

  • Combine warm water, active dry yeast, and sugar in a large bowl. Mix in ½ cup flour and let it sit for 10 minutes, allowing the mixture to puff up.
  • Mix in olive oil and salt, then gradually stir in the remaining flour. Knead the dough for 3-5 minutes until smooth.
  • Form the dough into a ball, coat with oil, and allow it to rise in a warm place for 1 hour until it doubles in size.
  • Punch down the dough and divide it into 8 pieces. Roll each piece into a ball and cover with a damp paper towel for 10-15 minutes.
  • Roll each ball into circles about ⅛ inch thick.
  • Preheat the oven to 475°F. Place the rolled-out dough on a preheated pizza stone or cast iron skillet and cook for 2-3 minutes until puffed. Flip and cook for an additional minute.
  • Heat a cast iron skillet over medium heat, brush with oil, and cook the rolled dough for 2-3 minutes until puffed, then flip and cook for an additional minute.
  • Remove the pita bread and cover with a towel to keep warm. Serve with your favorite meal.

Notes

  • Knead the dough well for smooth texture.
  • Ensure water is warm but not hot when activating yeast.
  • Pita tastes best when fresh.
