2tablespoonsfresh herbsChoose parsley, basil, or dill; finely chopped
3tablespoonsolive oil
1.5tablespoonsred wine vinegar
0.25teaspoonsalt
0.25teaspoonblack pepper
Instructions
Slice the cucumbers into half-moons or quarters. Salt them generously and let them sit in a colander for 20 to 30 minutes. Afterward, pat them dry with paper towels to remove excess moisture.
Chop the tomatoes into bite-sized pieces. Thinly slice the red onion and finely chop the herbs of your choice to bring freshness to the salad.
In a jar or bowl, combine olive oil, red wine vinegar, salt, and black pepper. Shake or whisk it until fully emulsified to create a smooth dressing.
In a large bowl, mix the cucumbers, tomatoes, onions, and herbs. Pour the dressing over the top and toss gently. Chill in the refrigerator for 20 to 30 minutes before serving to allow flavors to meld.
Notes
Choose ripe produce, don't rush the salting, try different herbs, serve chilled, and adjust the seasoning to taste.
