Spray the inside of the Crock Pot with cooking spray to prevent sticking.
Sprinkle the sliced onion evenly in the bottom to form a flavorful base.
Place the boneless chicken breasts on top of the onions in a single layer.
In a mixing bowl, combine the condensed cream of chicken soup, onion soup mix, and beef broth. Whisk until well mixed, then pour over the chicken.
Cover the Crock Pot and set it to LOW. Cook for 5 hours.
After 5 hours, layer the provolone cheese slices over the chicken and cook for an additional 10 minutes or until the cheese is melted and bubbly.
Remove the lid, sprinkle with thyme leaves and crispy fried onions. Cook on LOW with no lid for about 10 more minutes to crisp up the toppings.
Serve over cooked noodles or rice and enjoy!
Notes
Layer flavors with onions, use fresh ingredients for better taste, avoid lifting the lid during cooking, adjust cooking time for frozen chicken, and add mushrooms or bell peppers for variation.
