Ingredients

  • 2 large Sweet Onions (Vidalia or Walla Walla)
  • 1 cup All-Purpose Flour
  • 1.5 teaspoons Seasoned Salt
  • 0.75 teaspoon Baking Powder
  • 1 cup Cold Water
  • 2 large Eggs, lightly beaten
  • For frying Vegetable Oil

Instructions

  • Cut off the tops and peel away the skins of the onions. Slice them into ¼-inch rings and separate the individual layers. Discard the centers.
  • In a medium bowl, whisk together the flour, seasoned salt, and baking powder. Add cold water and beaten eggs, whisking until the batter is smooth.
  • Pour 2 inches of oil into a large pot and heat to 375°F over medium-high heat.
  • Dip each onion ring into the batter, shaking off any excess. Carefully place them into the hot oil, making sure not to overcrowd the pot.
  • Fry the onion rings for 2 to 4 minutes per side, until golden brown. Use tongs or a spider strainer to remove and drain them on paper towels.
  • Keep the onion rings warm in a 200°F oven while frying the remaining batches. Serve immediately with your choice of fry sauce or ketchup.

Notes

  • For best results, sprinkle a touch of salt on the onion rings as soon as they come out from the oil.
  • Try variations like dipping them in spicy mayo or garlic aioli, or sprinkle with Parmesan cheese and Italian seasoning for gourmet flavor.
