Ingredients

  • 2 pieces Chicken Breasts, sliced lengthwise
  • 0.5 teaspoon Garlic Powder
  • 1 tablespoon Olive Oil
  • 1 tablespoon Butter
  • 1 cup Heavy/Whipping Cream
  • 2 cups Fresh Baby Spinach
  • 0.25 cup Sun-Dried Tomatoes
  • 1 tablespoon Fresh Basil, chopped
  • To taste Salt & Pepper
  • For dredging Flour
  • 0.25 cup Chicken Broth or Dry White Wine
  • 1 teaspoon Dijon Mustard

Instructions

  • Slice the chicken breasts lengthwise for thinner pieces. Season each piece with salt, pepper, and garlic powder on both sides.
  • Coat the seasoned chicken in flour. Heat olive oil and butter in a skillet over medium-high heat.
  • Once hot, add the chicken and cook for 4-5 minutes on each side until golden brown. Remove from pan and set aside.
  • Deglaze the pan with chicken broth and Dijon mustard, stirring to scrape up any stuck bits. Let it simmer for a minute or two.
  • Add the heavy cream, spinach, and sun-dried tomatoes to the pan. Stir well, then return the chicken to the skillet.
  • Cook for another 5 minutes until the chicken is cooked through and the sauce thickens.
  • Stir in the chopped basil and adjust seasoning with extra salt and pepper if desired. Serve hot.

Notes

  • Use fresh spinach for best texture, don't skip flour dredging for a proper crust, and let sauce simmer longer for thickness.
