4cupsBoneless skinless chicken breasts, cooked and cubed or shredded
8slicesBeef Bacon, cooked and choppedFor that crunchy, smoky flavor.
3clovesGarlic, minced
1cupRanch dressing
1cupMozzarella cheese, shredded and divided
1cupCheddar cheese, shredded and divided
5cupsBroccoli, cut into floretsOr 1 lb frozen spinach, thawed and drained well.
Instructions
Preheat the oven to 375 degrees F (191 degrees C).
If using frozen spinach, thaw it and squeeze to remove excess water. If using broccoli, bring a pot of water to a boil and simmer the florets for 1-2 minutes until they are bright green.
In a large bowl, combine the chicken, bacon, drained spinach or broccoli, minced garlic, ranch dressing, and half of the shredded cheeses. Mix until all ingredients are well combined.
For an extra kick of ranch flavor, consider adding 1-3 teaspoons of ranch seasoning mix along with the dressing.
Transfer the mixture to a 9x13 inch (23x33 cm) glass or stoneware casserole dish, spreading evenly.
Sprinkle the remaining shredded mozzarella and cheddar cheeses evenly on top.
Bake the casserole in the preheated oven for about 15 minutes, or until it is hot and bubbly.
Notes
Let the casserole rest for a few minutes before serving to help it set.
For serving ideas, pair with a side salad or top with sliced green onions or fresh parsley.
