Ingredients

  • 40 ounces Pineapple Chunks, well-drained
  • 1 cup Sugar
  • 5 tablespoons Flour
  • ¼ teaspoon Salt
  • 1 cup Sharp Cheddar Cheese, shredded
  • ¼ cup Butter, melted
  • 1 sleeve Ritz Crackers, coarsely crushed (about 30 crackers)

Instructions

  • Preheat your oven to 350˚F. Butter an 8x8 baking dish, ensuring even coverage to prevent sticking.
  • Thoroughly drain the pineapple chunks and set aside ⅓ cup of the juice. In a medium bowl, mix the sugar, flour, salt, and reserved pineapple juice until smooth.
  • Add the drained pineapple chunks to the bowl, mixing well to coat. Transfer the mixture to the prepared baking dish and sprinkle the shredded cheddar cheese evenly over the top.
  • Coarsely crush the Ritz crackers and combine with the melted butter, mixing until well coated. Spread this cracker mixture evenly over the pineapple and cheese layer in the baking dish.
  • Place the casserole in the preheated oven and bake for 30 minutes, or until it’s hot, bubbly, and the top is golden brown. Enjoy!

Notes

  • Drain thoroughly to avoid a soggy casserole.
  • Use sharp cheddar cheese for the best flavor contrast with the sweet pineapple.
  • For maximum crunch, crush the crackers right before using.
  • Serve this casserole fresh from the oven for optimal taste.
