Thinly slice the scallions and dice the fire-roasted pepper. Grate the mozzarella cheese.
Heat 1 tablespoon of oil in a large nonstick skillet over medium-high heat. Cook the sausage patties for about 5 to 7 minutes on each side until browned.
In the same skillet, add 1 tablespoon of oil and cook frozen hash brown patties until golden-brown and crispy.
In a bowl, whisk together half of the scallions, eggs, sour cream, salt, and black pepper.
Reduce the heat to medium-low and pour the egg mixture into the skillet. Gently push the cooked edges toward the center until eggs are fluffy.
Warm the tortillas in the microwave for about 30 seconds.
Lay out each tortilla and layer with a hash brown patty, sausage, scrambled eggs, diced fire-roasted pepper, scallions, American cheese, and mozzarella.
Fold the bottom of the tortilla tightly over the filling, then fold in the sides and roll up tightly.
In the skillet, place the burritos seam-side down and cook until golden-brown, about 1-2 minutes per side.
Cut the burritos in half and serve with the optional sauce. Enjoy!
