Preheat the oven to 400 degrees Fahrenheit.
In a 9x13-inch baking dish, combine cherry tomatoes, Boursin cheese, minced garlic, olive oil, red pepper flakes, Italian seasoning, and a generous pinch of salt and pepper.
Toss everything together to mix well before baking.
While the cheese and tomatoes bake, bring a large pot of salted water to a boil.
Cook the penne pasta according to the package directions until al dente.
Remember to reserve ½ cup of pasta cooking water before draining the pasta.
Once the baking dish is out of the oven, gently smash the tomatoes and garlic with a fork.
Stir everything together to form a creamy sauce that combines the melted cheese and roasted tomatoes.
Combining the Ingredients
Add the cooked penne and chopped spinach to the baking dish.
Toss everything together well so the pasta is evenly coated in the creamy sauce.
Stir in some of the reserved pasta water gradually to loosen the sauce to your desired consistency.
Final Seasoning and Serve
Taste the dish and adjust the seasonings if necessary.
Garnish with fresh basil leaves and serve immediately, topped with a sprinkle of grated Parmesan cheese.
