Traditional baklava is a crispy, flaky dessert made with layers of phyllo dough and a nutty filling, wonderfully sweetened with syrup for a delightful treat.
In a medium bowl, combine finely chopped nuts and ground cinnamon.
Unroll the phyllo dough carefully and cover it with saran wrap followed by a damp dishcloth.
Melt the butter and brush the bottom and sides of a 9x13-inch baking pan with it.
Lay two sheets of phyllo in the pan and brush with additional butter. Continue layering until you have 8 sheets.
Spread 2 to 3 tablespoons of the nut mixture over the phyllo layers, add two more sheets of phyllo, brush with butter, and repeat until only 8 sheets remain.
Using a sharp knife, cut the baklava into pieces.
Bake for 45 to 50 minutes until golden and crispy.
While the baklava is baking, boil water and sugar until dissolved, then add vanilla and honey. Let it simmer for 20 minutes.
Pour the warm syrup over the baked baklava evenly and let it cool completely.
Notes
Keep phyllo workable by covering it with plastic wrap and a damp towel while working.
