Ingredients

  • 8 ounces Cavatappi pasta
  • 2 pints Cherry tomatoes
  • 8 ounces Feta cheese
  • ½ cup Extra virgin olive oil
  • ¼ teaspoon Salt
  • ¼ teaspoon Black pepper
  • 2 cloves Garlic, minced
  • ¼ cup Fresh basil, packed and chopped

Instructions

  • Preheat your oven to 400°F.
  • Place the cherry tomatoes in an oven-safe baking dish. Drizzle the olive oil over the top, then season with salt and pepper. Toss everything together.
  • Nestle the block of feta cheese in the center of the baking dish, surrounded by the tomatoes. Flip the feta a couple of times to coat it.
  • Bake for about 35 minutes until the cherry tomatoes burst and the feta starts to melt.
  • While the tomatoes and feta bake, cook the pasta in salted water according to package instructions until al dente.
  • Drain the pasta, reserving about ½ cup of the cooking liquid.
  • Remove the baking dish from the oven and add in the minced garlic and chopped basil. Toss to combine.
  • Transfer the drained pasta to the baking dish and mix everything thoroughly. Add reserved pasta water if needed.
  • Garnish with additional fresh basil and serve warm.

Notes

  • For added protein, consider adding grilled chicken or shrimp before serving.
  • You can swap cherry tomatoes for zucchini or bell peppers for variety.
