Ingredients

  • 5-6 cups Shredded red cabbage
  • 1 small Red onion, sliced
  • ¼ cup Cilantro, chopped
  • ¼ cup Red wine vinegar
  • Juice of 1 lime Lime juice
  • Zest of 1 lime Lime zest
  • ½ teaspoon Salt
  • 1 cup Mayonnaise
  • 2 tablespoons Vegetable oil
  • 3-4 Chipotle chiles in adobo sauce, roughly chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Lime juice
  • 1 ½ pounds Tilapia fillets, cut into strips
  • 1 cup All-purpose flour (or gluten-free 1:1 flour)
  • ½ teaspoon Salt
  • ½ teaspoon Ground black pepper
  • 1 teaspoon Paprika (or smoked paprika)
  • ¼ teaspoon Cumin
  • 1 cup Seltzer
  • Enough to fill the skillet Vegetable oil for frying
  • Enough Corn or flour tortillas, soft and warmed
  • Lime wedges

Instructions

  • In a large bowl, toss together the shredded red cabbage, sliced red onion, chopped cilantro, red wine vinegar, lime juice, lime zest, and salt. Mix well and set aside.
  • In a small bowl, combine the mayonnaise, vegetable oil, chipotle chiles, minced garlic, and lime juice. Stir until smoothly mixed. Set aside.
  • Pat the tilapia fillets dry with paper towels. In a medium bowl, whisk together the flour, salt, pepper, paprika, and cumin. Gradually add the Seltzer to the dry mixture, whisking until smooth.
  • Heat enough vegetable oil in a skillet over medium-high heat. Dip each fish strip into the Seltzer batter, coating fully. Carefully place the battered fish in the hot oil and fry for about 2 minutes per side, or until golden brown. Transfer to paper towels to drain.
  • Spread chipotle sauce on a warm tortilla. Place a fried fish piece on top, add slaw, drizzle more sauce, and finish with lime juice.

Notes

  • Pat the fish dry before battering for a better texture.
  • Use fresh ingredients for the best taste.
