Ingredients

  • 3 cups Avocado, diced
  • 2 cups English Cucumber, quartered and sliced
  • 2 cups Cherry Tomatoes, halved
  • ½ cup Radish, sliced thin
  • ½ cup Red Onion, sliced
  • 2 teaspoons Jalapeño Pepper, minced (optional)
  • 1 teaspoon Lime Zest
  • ¼ cup Lime Juice
  • 2 tablespoons Honey
  • 1 tablespoon Apple Cider Vinegar
  • 2 tablespoons Cilantro, chopped (more for garnish)
  • 1 teaspoon Garlic, minced
  • 1 teaspoon Dijon Mustard
  • ½ teaspoon Kosher Salt
  • ¼ teaspoon Black Pepper
  • ½ cup Avocado Oil (or olive oil)

Instructions

  • Cut the avocados in half and remove the pits. Dice them into ¾-inch pieces and place them in a large bowl. Cover to keep them fresh while you prepare the other ingredients.
  • In the same bowl, add the cucumber, cherry tomatoes, red onion, radishes, and jalapeño. Mix these ingredients gently to ensure even distribution.
  • In a separate small bowl, whisk together lime zest, lime juice, honey, apple cider vinegar, cilantro, minced garlic, Dijon mustard, salt, and pepper. Slowly drizzle in the avocado oil while whisking until the dressing thickens.
  • Drizzle the dressing over the salad and gently toss to coat the ingredients evenly. Garnish with additional cilantro and serve immediately for the best flavor and texture.

Notes

  • Select ripe but firm avocados for optimal texture.
  • Chill vegetables before serving for a refreshing experience.
  • For a spicy variation, add red chili peppers.
  • Serve with grilled chicken or fish for a balanced meal.
