Ingredients

  • 2 cups Fresh Pineapple
  • 15 ounce can Mandarin Oranges Drained
  • 14 ounces Maraschino Cherries Drained
  • 1 cup Sweetened Shredded Coconut
  • 3 cups Marshmallows
  • 1 ⅓ cups Heavy Cream
  • 3 Tablespoons Sugar
  • ¼ cup Sour Cream

Optional

  • 1 cup Green Grapes
  • ½ cup Pecans

Instructions

  • In a large mixing bowl, combine the heavy cream and sugar. Whip until soft peaks form, ensuring to maintain a light and airy texture.
  • Carefully fold the sour cream into the whipped mixture. Taste and add more sugar if you prefer a sweeter salad.
  • Cut the pineapple into small pieces. In a separate large bowl, combine the pineapple, drained mandarin oranges, and drained maraschino cherries.
  • Add the shredded coconut and marshmallows to the bowl with the fruits. Make sure all the canned fruit is thoroughly drained to prevent a runny texture.
  • Gently fold the whipped cream mixture into the fruit mix. This ensures even distribution without deflating the whipped cream.
  • Cover and refrigerate for about 2 hours to allow flavors to meld.

Notes

  • Ensure all canned fruits are thoroughly drained to prevent the salad from becoming too runny.
  • For best results with the cream, chill the bowl and beaters before whipping.
